  • Osso Buco or Beef Shank is a humble, yet powerful representative of the full, buttery, beef flavor profile not found anywhere else on the steer.  Diamond A Osso Buco is cut in meaty 1.5" thick cut that contain a flavorful bone.  It is ideal for soups, broths, braising and slow-cooking which bring out all the best flavors and tenderness this cut is best known for.

  • Osso Buco or better known by most butchers as beef shank is from the shank portion of the steer or the upper leg portion.  This cut contains a bone and can be tough cut due to the make up of the muscles in the leg but is used for making some of the most luxurious dishes when prepared low and slow.
