The Tri Tip, primarily a California favorite, has become a very popular cut amoung our  Texas customers. It is a supremely flavor rich, triangular cut roast that is excellent for smoking.  The tri tip tupically weighs 2.0 pounds and is a type of roast cut from the sirloin located between the short loin and round.  Tri tip is most noted for it unique triangular shape.
